If you just want a raw 12 volt source, then such a unit would be just fine. If any smoothing is needed, put a large value capacitor across the output leads. You can wire two 5 volt supplies in series to get 10 volts, is that enough? I wouldn't recommend wiring two supplies in parallel to get more current.
